Zero waste led to the birth of the calzone in Naples in the 18th century as a way to dispose of leftover dough. It was an early form of street food too. Da Giovanni takes you through the story behind the delicious calzone.
Strictly speaking, a calzone is a double-folded pizza. So it is a variation on the traditional pizza, only the toppings are not on top but the calzone is filled with it. The pizza chef first puts the ingredients on one half of the pizza base and then folds the other half over it. This is how you get the typical crescent shape of the pizza calzone.
Pizza calzone was first made in the 18th century in Naples. To avoid having to throw away leftover dough, Neapolitans turned it into small calzones with tomato and cheese -- delicious little morsels that were just perfect as street food.
